Undoubtedly, I love me some avocado toast, so I’m creating some easy avocado toast recipes you can eat and bliss out with!
Seriously, whomever created the first avocado toast is a culinary genius of epic proportions. Can you tell I love avocado toast? Well, really I’m in love with the avocado, and I will find any excuse to eat more of it. So, the toast part is really just a vehicle for more avocado.
Clearly, avocado toast never disappoints. It’s perfect for breakfast, lunch, dinner, snack time or anytime. We’ve all been doing the avocado toast thing for awhile now, and the fact that we’re still talking about it says something. It can be life-changing!
Toast and Gluten
However, when I sometimes indulge in some really amazing bakery bread like the Rosemary Olive Bread from Whole Foods, it’s on rare occasion. I don’t have Celiac disease, but I do know that gluten doesn’t make me feel good—and breads in general are a processed food, turn very quickly into sugar inside your body and, therefore, are not a regular in my diet. Just to note—real, high quality bakery bread that has been allowed to rise and fall, and do what it’s supposed to do, has less gluten than mass produced breads because the gluten is baked out during the long process.
So, with all of that said, when I indulge in my avocado obsession, I usually use Udi’s Gluten Free Millet Chia Loaf Bread. Yep, it’s a mouthful— but a mouthful of deliciousness.
Besides, Avocado Toast is rich and buttery. It’s so simple, and super easy to make. Toast some bread, smash some avocado on top, sprinkle with some sea salt and boom! However, if you feel like getting creative, here are two of my favorite ways to make avocado toast.
So go forth, eat avocado toast and delight your taste buds!

Cilantro, Jalapeno & Radish Avocado Toast
Ingredients:
1-2 slices of your favorite bakery, sprouted grain or gluten free bread
½ – 1 ripe avocado
Large handful of chopped, fresh cilantro
½ jalapeno, finely chopped, seeds removed (more or less depending on your spice factor!)
¼ – ½ inch piece of daikon radish, or 2 regular radishes, finely chopped.
Squeeze of lemon
Pinch of sea salt (or Maldon Smoked Sea Salt—it’s the bomb!)
Optional: Add a handful of fresh arugula on top for some added greens!
Directions:
1) Toast bread to your liking. I prefer to use a little organic ghee and toast the bread in an iron skillet.
2) Spread ¼ – ½ avocado on each slice of bread.
3) Sprinkle jalapeno, radish and cilantro evenly on each slice.
4) Top with a pinch of sea salt and a squeeze of lemon.

Smoked Salmon, Cucumber & Egg Avocado Toast
Ingredients:
1-2 slices of your favorite bakery, sprouted grain or gluten free bread
½ – 1 ripe avocado
2-3 slices of smoked salmon or gravlox
5-6 slices of cucumber
1-2 soft boiled eggs
(Boil eggs for 6-7 minutes for soft, place in ice bath for 5 minutes, then peel under stream of water)
Pinch of sea salt
Directions:
1) Toast bread to your liking. I prefer to use a little organic ghee and toast the bread in an iron skillet.
2) Spread ¼ – ½ avocado on each slice of bread.
3) Place salmon slices, cucumber and soft boiled egg on top.
4) Sprinkle with a pinch of sea salt.
5) Take a bite and bliss out!
