Okay, I know a big issue for so many of us is making time in the mornings to eat a healthy, energy boosting breakfast that doesn’t take an hour—and isn’t the grab and go bagel or pastry that will bust your gut and sap your energy an hour later!
With that in mind, I want to share one of my favorite energy boosting breakfasts, Awesome Overnight Oats, that only takes a few minutes to make the night before, so during those rushed mornings, you can really just grab and go—and be confident you are feeding yourself with fabulous real food that will boost your energy, fill you up and tickle your taste buds too!

And oh so good for you too! Porridge oats are a wonderful way to stabilize your blood sugar. They help lower cholesterol and decrease the risk of cardiovascular disease. And to top it off, they have an awesome amount of fiber that will keep you feeling fuller longer—and the complex carb will break down slowly boosting your energy to boot!
Did I mention how ridiculously easy it is to make?
The only necessary ingredients are Gluten Free Oats, Unsweetened Non-Dairy Milk and a natural sweetener like banana, 100% pure maple syrup or stevia.
Now for the optional ingredients…which are endless!! Chia seeds (adding huge amounts of omega-3s, protein, fiber, calcium, manganese and loads of other nutrients), cinnamon, granola, nuts & seeds. As well as raw cacao powder, unsweetened almond butter, fresh berries, mango, coconut flakes—you get get the picture!
I prefer to use my homemade cashew or almond milk, however, in a pinch I’ll use store bought unsweetened vanilla almond milk because it adds a delish vanilla flavor with no sugar. As a matter of fact, I will always push for you to go refined sugar free and use the real sweeteners made in nature. Some examples are banana, dates, honey, organic maple syrup or stevia.
And for extra measure, if you’re not doing the DIY milk version, choose a milk that is carrageenan free, non-GMO, and organic if possible.
Okay without further ado, here is my Awesome Overnight Oats Recipe. Oh, and you will definitely want to “do”!
AWESOME OVERNIGHT ENERY BOOSTING OATS
1 serving
INGREDIENTS
1/2 cup gluten free rolled oats
2/3 cup unsweetened cashew or almond milk
1 Tbsp pure maple syrup (or a few drops of stevia to taste)
BREAKFAST DIRECTIONS
Place oats into a mason jar (or bowl). Pour milk over the top, add sweetener, and shake (or mix well).
Make sure oats are completely covered.
Seal jar with a lid or bowl with plastic wrap and refrigerate overnight.
Optional Energy Boosting Breakfast add-ins!
Quick Tip: When adding an absorbent ingredient like cacao powder or chia seeds, you’ll want to slightly increase the milk. 🙂
Mango-Coconut Madness:
First, add in 1/2 fresh or frozen mango mashed, 1 tsp pure vanilla extract, 2 Tbs toasted coconut (or a few pieces of fresh coconut meat) before shaking/mixing the oats and milk, then refrigerate. After, top with extra mango chunks and toasted coconut flakes.
Chocolate-Banana-Almond Butter Oats:
First, mix in 1/2 ripe banana mashed, 1/2 tablespoon unsweetened cacao powder and 1-2 Tbs unsweetened almond butter into the oats before refrigerating. Serve with 1/2 tablespoon dollop of almond butter and 1/2 banana slices on top and some chopped nuts or raw cacao nibs! Seriously YUM!
Coco-Berry Good Oats:
First, mix in 1/2 cup of your fav mixed berries and 2 Tbs of toasted shredded coconut, then shake/mix the oats and milk and refrigerate. Then, serve with a few berries and some coconut flakes on top.
