Yep, it’s happening – Fall is officially here!
And apples are perfectly in season. Since we discussed the benefits of eating seasonally last week… here’s to celebrating the fruitful bounty!
Apples are a perfect transition food that helps cool you off from the hot summer months and prepare your body for the chillier months to come.
Did your mind just wander straight over to apple pie? Well, I’ve got a super simple and delish alternative that has just the right combination of natural sweetness and healthy nutrients – my Fierce Fall Apple Parfait.
FIERCE FALL APPLE PARFAIT
INGREDIENTS
½ cup soaked raw cashews (soak at least 20 minutes – up to an hour)
½ cup unsweetened almond (or coconut) milk from a carton (not canned)
½ teaspoon vanilla
1 cup chopped apple
1/3 cup rolled gluten-free oats (no need to cook these!)
1 tablespoon hemp seeds
DIRECTIONS

Combine cashews, non-dairy milk and vanilla in a blender and blend until smooth.

Layer ingredients in a small cup: Dollop of cream, spoonful of apples, top with oats and hemp seeds and enjoy!
